Fresh seafood, select meats, seasonal vegetables, housemade breads... each meal at Cuvée is created with love and careful attention to detail. 

Chef Gilbert Henry has received numerous awards for his culinary expertise and his prior establishment, Winterborne Restaurant in Portland, was highly rated by Zagat Review for years.    

He now showcases his considerable experience and precise palate in the great little town of Carlton, offering exceptional food in a chic and casual indoor café that is a favorite of locals and visitors alike.

HORS D'OEUVRES:

Huîtres:   Oysters sautéed in clarified butter, served with horseradish sauce - $8

Champignons: Sautéed wild mushrooms in a white wine sauce, served with semolina cake - $8.50

Moules Marinière:   Mussels steamed in garlic, parsley and white wine - $8.00

Tarte Flambée Traditional:  Alsatian tarte with crème fraîche, sautéed onions, smoked bacon, & Gruyère - $6 (half) / $10 (whole)

Mousse de Foie de Poulet:  Chicken liver mousse, served with toasted baguette slices and traditional condiments - $8

 Pommes Frites:  Double-dipped French fries, served in cone with remoulaude sauce  - $4

ENTREES:

Filet Mignon de Porc a l’Alsacienne:  
Medallions of pork in  charcutiere sauce, with red cabbage and housemade pasta  -  $20.75

Cornish Game Hen Confit:  Cornish game hen roasted in duck fat, served with mashed potatoes and blackcurrant-Port demi-glace  - $22

Coquilles St. Jacques: 
Scallops and small prawns cooked in a leek béchamel sauce, topped with melted chevre - $22

Rib Eye avec Pommes Frites: 
Rib-eye steak served with French fries and mixed garden vegetables - $23

Boeuf Bourguignon:  Marinated beef simmered with onions & mushrooms in a Pinot Noir sauce, served with garlic mashed potatoes  - $21.50

Poisson du Jour: 
Fresh catch of the day prepared to the Chef’s whim, accompanied by fresh garden vegetables - $22
