Chef Henry, a native of Alsace, France searched for a location for his new establishment that reminded him of home. Carlton, in the heart of Oregon Wine Country, met all his requirements. Hand crafted Country French cuisine, an extensive local wine list, a full bar, and a sophisticated dining room. Cuvée serves local products prepared in the Country French style.
Signature dishes include Cassoulet, Bouillabaisse, Escargot, Crab
Juniper, oysters,and Coquille St. Jacques. The menu leans toward
Seafood, but hearty meat dishes such as Bifteck avec Pomme Frites
and Lamb Chops can be found on the seasonally changing menu. Chef
Henry bakes handmade bread daily and creates Cuvée's tantilizing
desserts ranging from mouth watering Crème Caramel to the house
favorite Chocolate Lombard ("Death by Chocolate").
